Sausage with peppers and onions
Ingredients
¼ cup of olive oil
2 packs of Italian sausage (I prefer Primo or Johnsonville) 1 sweet (mild) and 1 hot
1 green pepper cut into strips
1 red pepper cut into strips
2 yellow onions
1 teaspoon of salt
1 teaspoon of pepper
½ teaspoon of dried Oregano
6 teaspoons of dried basil
4 cloves of garlic minced
2 tablespoons of tomato paste (I prefer Hunts)
1 can of petite diced tomatoes (I prefer Hunts)
1 cup of Marsala cooking wine (I prefer Holland House)
Rice, rolls or pasta (optional)
Put the olive oil in a large frying pan, and heat over med-hi heat. When oil is hot add sausage. Cook for 4-5 mins on each side just until they are brown, we will fully cook the sausage later. Remove and place on a plate. Keeping the fire under the pan.
Add onions, peppers, salt and pepper. Cook for like 4 mins until the veggies are tender. Add oregano, basil and garlic. Cook for another 2 mins stirring often. Add tomato paste and stir. Next add your Marsala wine and dice canned tomatoes and bring to a simmer.
As you’re waiting for the contents to simmer start cutting up your sausage. I like to cut on a diagonal slant, pieces should be about ½ inch thick yielding about 6 pieces per sausage. Stir contents in the pan one good time, scraping the bottom of the pan and then add sausage. Stir well. I like to drop my heat down to medium and let this cook for about 25 mins stirring often.
Serve over a bed of rice or Boardwalk style on an Italian roll.
Tips:
- While you are waiting for oil to heat and sausage to cook start cutting your onions and peppers.
- I also get 2 small bowls for my seasonings ready. 1 bowl has the salt and pepper, the other bowl has my oregano and basil
- Because I cook alot I buy the minced garlic from the supermarket, its found in the produce dept, has a blue cap. Get a jar. It last for a while and its so easy to use. Conversion is on the cap 1/2 teaspoon = 1 garlic clove
