yup, for state farm anyway. i called them before i went and the lady said only if it's not a "race".

That is crazy....Most important thing is you are alright. Like others have said your insurance company should cover a track incident as long as it was not a sanctioned race. Feel better man

How does that process work? Does the rider get a form of literature from the track organization stating it's either a practice session/track day or a race?

Yes...as per TPM, "Closed Circuit Motorcycle Skills Enhancement, ART, is what we provide at Private Venues. Insurance always pays." They give a letter to the rider to give it ins. if they ask for it.

The rig came yesterday and took it away
on Saturday, the stunt guys were using is a prop, and doing circle wheelies and burnouts around it
