Street tires warm faster aand retain heaat better than a race tire but cannont operate at the consistently high temps of rigorous track duty. They do work well until they get to hot. For this reason you'll see many choose a street tire for very cold track days. Street tires also have more silica in them making them a better choice for wet and damp conditions.
Also since your breaking in anew bike those tires won't be an issue since the brake etc need to bed. Side note though. OEM tires can have a manufacture date of years old even on a new bike.

So from what I'm hearing you should be able to ride to the tires full potential right out of the box and I've been cornering like a grandma for no reason?

Actually, when I picked up my 08 1000RR, someone at the dealership actually told me to do just that. I told my cousin because he owns the place and he was PISSED!
