Street tires warm faster aand retain heaat better than a race tire but cannont operate at the consistently high temps of rigorous track duty. They do work well until they get to hot. For this reason you'll see many choose a street tire for very cold track days. Street tires also have more silica in them making them a better choice for wet and damp conditions.
Also since your breaking in anew bike those tires won't be an issue since the brake etc need to bed. Side note though. OEM tires can have a manufacture date of years old even on a new bike.
